Crispy Oven-Baked Chicken Fajitas

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

1 tablespoon lime juice

Tortillas, for serving

Optional toppings: sour cream, guacamole, shredded cheese, fresh cilantro

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare Chicken Marinade: In a big mixing bowl, combine the olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Mix well until it forms a paste.

      Marinate Chicken: Add the sliced chicken to the bowl and toss to coat the chicken evenly in the spice mixture. Cover and let it marinate in the fridge for at least 30 minutes (or overnight for more flavor).

        Prepare Vegetables: In a separate bowl, combine the sliced bell peppers and onion. Drizzle with a little olive oil, lime juice, and a pinch of salt, and toss to coat.

          Assemble on Baking Sheet: Spread the marinated chicken evenly on one half of the prepared baking sheet. On the other half, spread out the seasoned vegetables.
