2 medium zucchinis

1 cup breadcrumbs (panko recommended for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash the zucchinis and cut the ends off. Slice each zucchini into sticks, about 1/4 inch thick. Pat them dry with paper towels to remove excess moisture, which helps achieve crispiness.

      Set Up Bread Crumb Station: In three separate shallow bowls, set up your breading station. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

        Bread the Zucchini: Take a zucchini stick and coat it in flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any extra egg to drip off.
