Crockpot Beef and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 pound ground beef (lean)

1 cup cooked quinoa

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

½ tsp salt

¼ tsp black pepper

1 cup shredded cheese (cheddar or Mexican blend)

2 tbsp olive oil

Fresh parsley or cilantro, for garnish

Instructions
 

Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

    Cook the Filling: In a skillet over medium heat, add the olive oil. Sauté the diced onion for about 3 minutes until soft, then add minced garlic and ground beef. Cook until the beef is browned and cooked through, breaking it apart as it cooks.

      Mix the Filling: Once the beef is cooked, add the cooked quinoa, diced tomatoes (with their juices), cumin, smoked paprika, chili powder, salt, and black pepper. Stir well until combined.

        Stuff the Peppers: Carefully spoon the beef and quinoa mixture into each bell pepper, packing them tightly.

          Prepare the Crockpot: Place the stuffed peppers upright in the crockpot. If you have extra filling, you can spoon it around the peppers in the pot.

            Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the peppers are tender.

              Add Cheese: In the last 15 minutes of cooking, sprinkle shredded cheese on top of each stuffed pepper and cover to allow it to melt.

                Serve: Use tongs to carefully remove the peppers from the crockpot. Garnish with fresh parsley or cilantro before serving. Enjoy your delicious, wholesome meal!
