1.5 lbs beef chuck roast, cut into 1-inch cubes

4 cups beef broth

2 cups carrots, sliced

2 cups potatoes, diced (Yukon Gold or Russet)

1 cup celery, chopped

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes, with juice

1 medium onion, chopped

4 cloves garlic, minced

2 tsp dried thyme

1 tsp dried oregano

1 bay leaf

Salt and pepper, to taste

2 tbsp Worcestershire sauce

1 tbsp olive oil (for browning beef)

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet and brown on all sides, about 5-7 minutes. This step enhances the flavor of the soup.
