Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) diced tomatoes

1 packet (1 oz) chili seasoning mix

1 tsp cumin

1 cup corn kernels (frozen or canned)

2 cups tortilla chips

2 cups shredded cheddar cheese

1 cup sour cream (optional for serving)

1 jalapeño, sliced (optional for garnish)

Fresh cilantro, chopped (optional for garnish)

Instructions
 

Brown the Meat:

    In a large skillet over medium heat, cook the ground beef (or turkey) until browned. Add the diced onion and minced garlic, cooking for an additional 2-3 minutes until the onion softens. Drain excess fat.

      Combine Ingredients:

        Transfer the cooked meat mixture to your crockpot. Add in the black beans, kidney beans, diced tomatoes (with their juice), chili seasoning mix, cumin, and corn. Stir well to combine all ingredients.

          Cook the Chili:

            Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until flavors meld together.

              Prepare the Casserole Layer:

                Once the chili is cooked, layer half of the tortilla chips in the bottom of a 9x13 inch baking dish. Pour half of the chili mixture over the chips, then sprinkle with 1 cup of shredded cheddar cheese.

                  Repeat Layers:

                    Repeat the layers with the remaining tortilla chips, chili mixture, and top with the other cup of shredded cheddar cheese for a gooey melt.

                      Bake:

                        Preheat your oven to 350°F (175°C). Bake the casserole for about 20-25 minutes, or until the cheese is bubbly and slightly golden.

                          Serve:

                            Remove from oven and let it cool slightly before serving. Top with sour cream, sliced jalapeños, and fresh cilantro if desired.
