Crockpot Cucumber Dill Chicken

4 boneless, skinless chicken breasts

1 large cucumber, thinly sliced

1 small onion, finely chopped

3 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 teaspoon lemon zest

1 tablespoon lemon juice

Salt and pepper, to taste

1 tablespoon olive oil

Optional garnish: additional dill and cucumber slices

Prepare the Chicken: Season the boneless chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat. Sear the chicken breasts for about 3-4 minutes on each side until golden brown. This step is optional but adds great flavor.

    Layer Ingredients in Crockpot: In the bottom of your crockpot, layer the thinly sliced cucumbers, chopped onion, and minced garlic.

      Add Chicken: Place the seared chicken breasts on top of the vegetable layer.

        Make the Sauce: In a mixing bowl, whisk together the chicken broth, Greek yogurt, fresh dill, lemon zest, and lemon juice until smooth. Pour this sauce over the chicken in the crockpot.

          Cook: Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and fully cooked.
