Ingredients
  

2 large cucumbers, peeled and grated

2 cups plain yogurt (Greek or regular)

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon cumin powder

1/2 teaspoon garlic powder

1 tablespoon fresh lemon juice

2 tablespoons fresh mint leaves, finely chopped

2 tablespoons fresh coriander (cilantro), finely chopped

Optional: 1/4 teaspoon red chili powder for a hint of spice

Optional: 1/4 cup finely chopped onion or scallions for added crunch

Instructions
 

Prepare the Cucumbers: Start by grating the cucumbers into a mixing bowl. After grating, sprinkle them lightly with salt and let them sit for about 10 minutes. This will help draw out excess moisture. After 10 minutes, gently squeeze the grated cucumbers to remove more liquid.

    Mix Ingredients: In the crockpot, add the strained grated cucumbers. Follow this with the 2 cups of yogurt, ensuring to break it up a bit for an easier mix. Add in the cumin powder, garlic powder, and lemon juice. If you like a bit of heat, add the optional red chili powder.

      Add Herbs: Toss in the finely chopped mint and coriander (cilantro). If using, mix in the chopped onion or scallions for added texture.

        Combine: Gently mix all ingredients in the crockpot, ensuring everything is well combined. Taste and adjust seasoning if necessary.

          Cooking: Set your crockpot on low for about 1 hour. This allows the flavors to meld together beautifully without heating the raita too much, which is key for maintaining a fresh taste.
