Ingredients

1 large cucumber, grated

2 cups Greek yogurt (preferably full-fat)

2 tablespoons fresh dill, finely chopped

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon olive oil

Salt and pepper, to taste

Optional: 1/4 teaspoon crushed red pepper flakes (for some heat)

Instructions

Prepare the Cucumber: Start by washing the cucumber thoroughly. Grate it using a box grater or a food processor. Once grated, place the cucumber in a clean dish towel or cheesecloth and squeeze out any excess moisture. This will help prevent the dip from becoming watery.

Mix the Base: In a mixing bowl, combine the Greek yogurt, minced garlic, lemon juice, and olive oil. Stir until the ingredients are well incorporated.

Incorporate the Cucumber: Gently fold the grated cucumber into the yogurt mixture. Ensure that it's evenly distributed without over-mixing, which could make the dip watery.

Add the Flavors: Add in the freshly chopped dill, salt, and pepper to taste. If you like a bit of heat, sprinkle in the crushed red pepper flakes.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate the dip for at least 30 minutes. This allows the flavors to meld beautifully.

Serve: When ready to serve, give the dip a gentle stir and transfer it to a serving bowl. Garnish with a sprig of dill or a few cucumber slices on top for presentation.
