Ingredients

For the Beef Tacos:

1 lb ground beef (preferably 80/20 for flavor)

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp taco seasoning (store-bought or homemade)

1/2 cup beef broth (or water)

Salt and pepper, to taste

8 small corn or flour tortillas

For the Creamy Avocado Sauce:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

Juice of 1 lime

1/4 tsp garlic powder

Salt and pepper, to taste

Fresh cilantro, for garnish

Optional Toppings:

Shredded lettuce

Diced tomatoes

Shredded cheese (cheddar or Mexican blend)

Sliced jalapeños

Salsa or hot sauce

Instructions

Prepare the Creamy Avocado Sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed. Set aside.

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent (about 3-4 minutes).

Add the Ground Beef: Increase the heat to medium-high and add the ground beef. Break it apart with a spatula and cook until no longer pink (about 5-7 minutes). Drain excess grease if necessary.

Season the Beef: Sprinkle in the taco seasoning, stir well, and add the beef broth (or water). Let it simmer for about 5 minutes until the mixture thickens slightly. Season with salt and pepper to taste.

Warm the Tortillas: In a separate skillet or directly over a gas flame (with a pair of tongs), warm the tortillas until they are pliable and lightly toasted on each side.

Assemble the Tacos: Spoon the flavorful beef mixture into the warm tortillas. Top with the creamy avocado sauce and your choice of optional toppings like shredded lettuce, diced tomatoes, shredded cheese, and jalapeños.

Serve and Enjoy: Garnish with fresh cilantro and serve immediately with extra lime wedges, salsa, and hot sauce on the side.
