Easy Charcuterie Pasta Bake

12 oz penne pasta

1 tablespoon olive oil

1/2 cup diced salami

1/2 cup diced pepperoni

1/2 cup diced prosciutto

1 cup pepperoncini, sliced

1 cup cherry tomatoes, halved

1 cup black olives, pitted and halved

2 cups shredded mozzarella cheese

1 cup ricotta cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Meats: In a large skillet, heat the olive oil over medium heat. Add the diced salami, pepperoni, and prosciutto. Sauté for about 3-4 minutes until the meats are slightly crisped. Remove from heat.

        Mix the Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed meats, pepperoncini, cherry tomatoes, black olives, and half of the mozzarella cheese. Stir in the ricotta cheese, garlic powder, oregano, basil, salt, and pepper until well combined.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Add Toppings: Top with the remaining mozzarella cheese and sprinkle with additional oregano and basil for extra flavor.

              Bake: Cover the baking dish with aluminum foil and place it in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbling and lightly golden.

                Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
