1 lb (450g) boneless, skinless chicken breasts, thinly sliced

3 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 large red bell pepper, sliced

1 large green bell pepper, sliced

1 medium onion, sliced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

8 small flour or corn tortillas

Optional toppings: sour cream, salsa, avocado, shredded cheese

Instructions
 

Marinate the Chicken: In a large bowl, combine the sliced chicken, 2 tablespoons of olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the chicken is well-coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Veggies: In a large skillet over medium-high heat, add the remaining tablespoon of olive oil. Once hot, add the sliced bell peppers and onion. Season with a pinch of salt and pepper. Sauté for about 5-7 minutes, or until they are tender and slightly charred. Remove from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the marinated chicken. Spread it out in an even layer and allow it to cook undisturbed for about 5 minutes, then stir and continue cooking for another 3-5 minutes, until fully cooked through and no longer pink in the center.
