Ingredients

8 oz. spaghetti or linguine pasta

1 lb. large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

1/4 cup white wine (optional)

1 lemon, juiced and zested

1/4 cup fresh parsley, chopped

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once melted, add the shrimp in a single layer. Season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, stir in the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant but not browned.

Deglaze the Pan: If using, carefully pour in the white wine to deglaze the pan, scraping up any bits stuck to the bottom. Let it simmer for 2-3 minutes until slightly reduced.

Combine Ingredients: Lower the heat and add the lemon juice and zest to the skillet. Return the shrimp to the pan, and toss to combine. Gradually add the cooked pasta, mixing well to ensure the pasta is coated in the garlic butter sauce. If the pasta seems dry, add a splash of the reserved pasta water until you reach your desired consistency.

Finish With Herbs: Stir in the chopped parsley and adjust the seasoning with more salt and pepper if necessary.

Serve: Divide the garlic butter shrimp pasta across plates. Top with grated Parmesan cheese and a sprinkle of fresh parsley for garnish. Enjoy!
