4 bone-in, skin-on chicken thighs

1 cup fresh or frozen corn kernels

4 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon butter

1 teaspoon paprika

1 teaspoon dried thyme

Salt and freshly ground pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (optional, for serving)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chicken: Pat the chicken thighs dry with paper towels. This helps achieve a crispy skin. Season the thighs generously with salt, pepper, paprika, and thyme on both sides.

      Sear the Chicken: In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for 5-7 minutes until the skin is golden brown. Flip and sear the other side for another 5 minutes. Remove the chicken from the skillet and set aside.

        Cook the Garlic and Corn: In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil and the butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it. Then add the corn kernels, stirring them in. Cook for about 3-4 minutes until heated through and slightly caramelized. Season with a pinch of salt and pepper.

          Combine and Bake: Nestle the seared chicken thighs back into the skillet (on top of the corn). Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

            Finish and Serve: Once cooked, remove the skillet from the oven. Let it rest for 5 minutes. Garnish with fresh parsley and serve with optional lemon wedges for a zesty touch.
