Ingredients

1 pound ground turkey

1 large sweet potato, peeled and cubed

1 cup frozen peas and carrots

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup chicken broth

2 tablespoons Worcestershire sauce

Salt and pepper to taste

½ cup milk

2 tablespoons butter

Fresh parsley for garnish (optional)

Instructions

Prepare the Sweet Potato: Place the cubed sweet potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot. Add milk and butter, then mash until smooth. Season with salt and pepper to taste.

Cook the Turkey Mixture: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Add ground turkey to the skillet, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.

Add Vegetables and Seasoning: Stir in the frozen peas and carrots, thyme, rosemary, Worcestershire sauce, chicken broth, and season generously with salt and pepper. Let the mixture simmer for about 5-10 minutes, allowing all flavors to meld and the sauce to thicken slightly.

Assemble the Pie: Preheat your oven to 400°F (200°C). In a baking dish, spread the turkey mixture evenly across the bottom. Top it with the mashed sweet potato, spreading it out gently to cover the filling completely.

Bake: Place the assembled pie in the preheated oven and bake for 20-25 minutes, or until the top is slightly golden and the edges are bubbling.

Serve and Enjoy: Once done, remove from the oven and let it sit for a few minutes. Garnish with fresh parsley if desired, then scoop and serve warm.
