2 medium zucchinis, grated

1 cup fresh corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/2 cup grated Parmesan cheese

2 green onions, finely chopped

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

Olive oil, for frying

Fresh herbs (like parsley or cilantro) for garnish, optional

Prep the Zucchini: Start by grating the zucchinis using a box grater. Once grated, place the zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible. This step is crucial to prevent soggy fritters!

    Mix the Batter: In a large mixing bowl, combine the grated zucchini, corn kernels, flour, cornmeal, eggs, grated Parmesan cheese, green onions, baking powder, garlic powder, paprika, salt, and pepper. Stir until everything is well combined and forms a thick batter.

      Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. You can test if the oil is ready by dropping a small spoonful of the batter into the hot oil; it should sizzle immediately.

        Fry the Fritters: Using a tablespoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil, leaving space between each fritter. Flatten them slightly with the back of the spoon to achieve an even cook. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

          Drain and Serve: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Continue frying the rest of the batter in batches.
