Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1 cup milk (or a non-dairy alternative)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

A pinch of salt

1/4 cup mini chocolate chips or nuts (optional)

1/4 cup maple syrup (for serving)

6-8 popsicle sticks

Instructions

Prepare the Mixture: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add the rolled oats, milk, vanilla extract, baking powder, cinnamon, and salt to the bowl. Stir until well combined. If you're adding chocolate chips or nuts, fold them into the mixture.

Fill the Molds: Pour the pancake batter evenly into popsicle molds, filling each cavity about 3/4 full. If you don't have popsicle molds, you can use small cups or muffin tins lined with parchment paper.

Insert Sticks: Place a popsicle stick into the center of each mold, ensuring that it stands upright. If using cups or muffin tins, you can also place the sticks in the center after the batter has set slightly in the freezer.

Freeze: Place the molds in the freezer and freeze for at least 4 hours or until completely solid.

Unmold and Serve: Once frozen, carefully remove the pancake pops from their molds. If they’re sticking, run the molds under warm water for a few seconds to help release them.

Enjoy: Serve the breakfast pops drizzled with maple syrup for a delicious start to your day!
