2 cups fresh blackberries (or frozen, thawed)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 cup coconut cream (chilled)

1/2 cup Greek yogurt (plain)

1/4 cup unsweetened shredded coconut

1 tablespoon lime juice (freshly squeezed)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: extra shredded coconut for topping

Prepare the Blackberry Purée: In a blender, combine the blackberries and honey (or maple syrup). Blend until smooth. If you prefer a seedless purée, strain the mixture through a fine mesh sieve and discard the seeds. Set aside.

    Make the Coconut Cream Mixture: In a large bowl, whisk together the coconut cream, Greek yogurt, shredded coconut, lime juice, vanilla extract, and salt until smooth and well combined.

      Layering: In a lined 8x8 inch baking dish, pour half of the coconut cream mixture, spreading it evenly. Next, spoon half of the blackberry purée over the coconut layer. Use a knife or skewer to gently swirl the blackberry purée into the coconut layer for a marbled effect. Repeat with the remaining coconut cream mixture and blackberry purée.

        Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer for at least 4-6 hours or until completely frozen.

          Slice and Serve: Once the bars are frozen solid, remove them from the freezer and let them sit for about 5 minutes at room temperature for easier slicing. Lift the bars out of the pan using the parchment paper. Cut into squares or rectangles and sprinkle with extra shredded coconut if desired.
