½ cup granulated sugar

1 tablespoon cornstarch

1 teaspoon lemon zest

¼ cup freshly squeezed lemon juice

3 large eggs

½ teaspoon vanilla extract

2 tablespoons powdered sugar (for dusting)

    Make the Crust: In a medium bowl, combine the all-purpose flour, powdered sugar, and salt. Gradually mix in the melted butter until the mixture resembles wet sand. Press this mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden. Remove from the oven and let it cool slightly.
