2 cups ripe peaches, peeled and diced

1 cup plain Greek yogurt (or your favorite yogurt)

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Optional toppings: granola, chopped nuts, or shredded coconut

Prepare the Peaches: If you’re using fresh peaches, start by peeling and dicing them into small pieces. If using frozen peaches, allow them to thaw slightly for easier blending.

    Blend Ingredients: In a blender or food processor, combine the diced peaches, Greek yogurt, honey, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy, ensuring there are no large pieces of peach remaining.

      Taste and Adjust: Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup. Blend again if you add more.

        Fill the Cups: Spoon the blended peach yogurt mixture into silicone muffin cups or any small cups/molds of your choice, filling them to the top.

          Freeze: Place the filled cups in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

            Serve and Enjoy: Once frozen, remove the yogurt cups from the molds. If they are difficult to remove, you can run warm water on the outside of the molds for a few seconds. Serve them topped with granola, chopped nuts, or shredded coconut for an extra crunch and flavor.
