2 cups fresh or frozen pineapple chunks

1 cup coconut milk (canned or carton)

1 ripe banana

2 tablespoons chia seeds

1 tablespoon honey or maple syrup (optional, adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: shredded coconut, chopped nuts, or fresh pineapple pieces

Instructions
 

Blend the Base: In a blender, combine the pineapple chunks, coconut milk, banana, chia seeds, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Blend until smooth and creamy, approximately 1-2 minutes.

    Check Consistency: Taste the mixture and adjust sweetness if necessary. If you prefer a thicker texture, add a bit more chia seeds and blend again for a few seconds.

      Prepare Molds: Pour the smoothie mixture into popsicle molds, leaving a little space at the top as the mixture may expand when frozen.

        Insert Sticks: If your molds have built-in sticks, go ahead and insert them. If not, place wooden popsicle sticks into the center of each mold.

          Freeze: Carefully place the filled molds in the freezer and allow them to freeze for at least 4-6 hours or until solid.

            Release Pops: When ready to serve, run warm water over the outside of the molds for a few seconds to help release the popsicles. Gently pull the sticks to remove the pops.
