Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons brown sugar

1 cup plain Greek yogurt

1 cup canned pumpkin puree

1/2 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/2 cup chopped pecans (optional, for topping)

Whipped cream (for serving, optional)

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Stir until well combined. Press the mixture firmly into the bottom of an 8x8-inch square baking dish to form an even layer. Place in the freezer for 10-15 minutes to set.

Make the filling: In a large mixing bowl, whisk together the Greek yogurt, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and salt until smooth and well combined.

Assemble the pie: Once the crust is set, remove it from the freezer. Pour the pumpkin yogurt filling over the crust and spread it evenly with a spatula.

Add toppings (optional): If using, sprinkle the chopped pecans on top of the filling for added crunch and flavor.

Freeze: Cover the baking dish with plastic wrap or aluminum foil and freeze for at least 4 hours, or until the filling is completely firm.

Slice and serve: Once frozen, remove the dish from the freezer. Allow it to sit at room temperature for a few minutes to soften slightly. Cut into squares with a sharp knife and serve with a dollop of whipped cream, if desired.
