Ingredients

1 cup fresh raspberries

1 cup dark chocolate chips (at least 70% cacao)

1 tablespoon coconut oil

1/4 cup chopped nuts (almonds or pistachios preferred)

Sea salt (for sprinkling)

1 teaspoon vanilla extract (optional)

Instructions

Prepare the Raspberries: Rinse the raspberries gently under cold water and pat them dry with a paper towel. Make sure they are free from any excess moisture to avoid ice crystals forming.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the mixture is smooth and fully melted. This should take about 1 to 1.5 minutes in total. If you're using vanilla extract, stir it in once the chocolate is melted.

Coat the Raspberries: Dip each raspberry into the melted chocolate, using a fork to ensure they are fully coated. Allow excess chocolate to drip off before transferring them to a parchment-lined baking sheet.

Add the Toppings: While the chocolate is still wet, sprinkle a few chopped nuts over each chocolate-covered raspberry. Follow up with a light sprinkle of sea salt for a gourmet touch.

Freeze: Place the baking sheet in the freezer for about 1-2 hours, or until the chocolate is completely firm.

Serve: Once frozen, transfer the Raspberry Chocolate Bites into an airtight container. Store them in the freezer, and enjoy your delightful sweet treat straight out of the freezer.
