Frozen Strawberry Kiwi Pops

Ingredients
  

2 cups fresh strawberries, hulled and sliced

2 ripe kiwis, peeled and diced

1 cup coconut water (or fruit juice of your choice)

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon lime juice

Pinch of salt

Popsicle molds

Optional: fresh mint leaves for garnish

Instructions
 

Prepare the Strawberries:

    In a blender or food processor, combine the sliced strawberries, coconut water (or fruit juice), honey (or maple syrup), lime juice, and a pinch of salt. Blend until smooth. Taste and adjust sweetness if needed.

      Layer the Ingredients:

        Pour the strawberry mixture into popsicle molds, filling each mold about halfway.

          Add Kiwi:

            In a separate bowl, add the diced kiwis. You can either mash them slightly or leave them diced for a chunkier texture. Carefully layer the kiwi over the strawberry mixture in the molds until each mold is nearly full. You may gently mix them for a swirled effect or leave them layered.

              Insert Sticks:

                If your molds have a stick holder, insert the sticks now. If not, freeze the pops for about 30-45 minutes until the mixture is slightly firm, then insert sticks.

                  Freeze:

                    Freeze the popsicles for at least 4 hours or until completely solid.

                      Unmold and Serve:

                        To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and serve immediately. Garnish with fresh mint leaves if desired.
