2 large apples (Honeycrisp or Granny Smith for tartness)

1 cup Greek yogurt (plain or vanilla flavored)

2 tablespoons honey or maple syrup (adjust sweetness to taste)

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract (optional)

Pinch of salt

Cooking spray or silicone baking mat

Prepare the Apples: Preheat your oven to 225°F (107°C). Wash the apples thoroughly, remove the core, and slice them thinly, about 1/8 inch thick. The thinner the slices, the crispier the chips will be.

    Cinnamon Mixture: In a small bowl, mix the ground cinnamon and a pinch of salt. If you're using honey or maple syrup, whisk it into the Greek yogurt along with the vanilla extract until the mixture is smooth and well combined.

      Coat the Apple Slices: Lightly spray a baking sheet with cooking spray or line it with a silicone baking mat. Arrange the apple slices in a single layer on the baking sheet. Using a brush or spoon, spread a small amount of the yogurt mixture onto each apple slice. Sprinkle a pinch of the cinnamon mixture on top of each slice as well.

        Bake the Apple Chips: Place the baking sheet in the preheated oven and bake the apple slices for about 1.5 to 2 hours, turning them midway through to ensure even drying. The chips are done when they are dry and crisp.
