1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

2 tablespoons sugar

1 cup cream cheese, softened

1 cup mango yogurt (can substitute with plain yogurt and add mango puree)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh mango, diced

1/4 cup lime juice

1 teaspoon gelatin (optional for firmness)

A pinch of salt

Prepare the crust: In a medium bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until all the crumbs are evenly coated. Press the mixture firmly into the bottom of a silicone coin mold to create the base of your cheesecake coins. Place the mold in the freezer for about 15 minutes to set.

    Make the filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the mango yogurt, powdered sugar, and vanilla extract, mixing until well combined and free of lumps.

      Mix in fruits: Gently fold in the diced fresh mango and lime juice into the cream cheese mixture. If you are using gelatin, dissolve it in a small amount of warm water and add it to the mixture for a firmer texture.
