1/2 cup fruit jam (strawberry, raspberry, or your choice)

Pinch of salt

Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, almond milk, honey (or maple syrup), vanilla extract, cinnamon, and a pinch of salt. Mix well until all ingredients are evenly combined.

    Shape Oat Coins: Using your hands or a cookie scoop, form the oat mixture into small, coin-shaped discs (about 2 inches in diameter) and place them on a parchment-lined baking sheet. Make sure they are not too thick; around 1/4 inch is ideal for even freezing.

      Chill the Oat Coins: Place the baking sheet in the refrigerator for about 30 minutes to allow the oat coins to firm up slightly.

        Prepare the Yogurt Layer: While the oat coins are chilling, mix the Greek yogurt with a bit of honey or maple syrup if you prefer a sweeter taste. Stir in some cinnamon for added flavor, if desired.

          Assemble: Once the oat coins are firm, take them out of the refrigerator. Spread a generous layer of your chosen jam onto half of the oat coins. Then, spoon the prepared Greek yogurt on top of the jam. Finish by placing an un-topped oat coin on each of these to create a sandwich style.

            Freeze: Place the assembled coins back on the baking sheet and freeze them for at least 2-3 hours, or until they are completely frozen solid.
