Ingredients

For the crust:

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons sugar

1/2 teaspoon cinnamon

For the filling:

1 cup pumpkin puree (canned or homemade)

2 cups plain Greek yogurt

3/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

For the topping:

1/2 cup pecans, chopped

1/4 cup caramel sauce (optional for drizzling)

Whipped cream (optional for serving)

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined. Press the mixture evenly into the bottom of an 8x8 inch (20x20 cm) baking dish. Bake for 8-10 minutes until lightly golden. Remove and let it cool completely.

Make the filling: In a large mixing bowl, combine the pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and salt. Whisk until the mixture is smooth and homogeneous.

Layer the filling: Once the crust has cooled, pour the pumpkin yogurt filling over the crust, spreading it evenly. Smooth the top with a spatula for a clean finish.

Freeze: Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4 hours, or until firm.

Prepare the topping: While the squares are freezing, toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant. Set aside to cool.

Serve: Once the squares are frozen solid, remove them from the freezer and let sit for 5-10 minutes to soften slightly. Cut into squares, then sprinkle with toasted pecans. Drizzle with caramel sauce if desired and serve with whipped cream on the side.
