For the Yogurt Layer:

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

A pinch of sea salt

For the Crunch Layer:

1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/3 cup melted coconut oil

2 tablespoons brown sugar

1/2 cup mini chocolate chips

For the Toppings:

1/2 cup mini marshmallows

Extra chocolate chips (for drizzling)

A handful of crushed graham crackers (for garnish)

Instructions
 

Prepare the Yogurt Mixture:

    In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir until smooth and well mixed.

      Make the Crunch Layer:

        In another bowl, mix the graham cracker crumbs, cocoa powder, melted coconut oil, and brown sugar until it resembles a wet sand texture. Fold in the mini chocolate chips.

          Assemble the Coins:

            Line a baking sheet with parchment paper. Using a round cookie cutter or a small biscuit cutter, spoon a little yogurt mixture into the bottom of each mold, filling it about halfway. Gently press the crunch mixture on top, pressing down to create a compact layer.

              Add the Marshmallows:

                Sprinkle mini marshmallows evenly on top of the crunch layer.

                  Freeze:

                    Place the baking sheet in the freezer for about 4-6 hours or until frozen solid.

                      Drizzle and Garnish:

                        Once completely frozen, melt some additional chocolate chips and drizzle over the top of each frozen yogurt coin. Lastly, sprinkle on some crushed graham crackers for extra crunch.

                          Serve:

                            To serve, gently pop the coins out of the molds and place them on a serving platter. Enjoy these delightful treats straight from the freezer!
