Fruit Pizza Breakfast Muffins

For the Muffins:

1 ½ cups all-purpose flour

½ cup rolled oats

½ cup sugar (or brown sugar for a richer flavor)

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ teaspoon cinnamon (optional)

1 cup Greek yogurt (plain or flavored)

2 large eggs

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 cup mixed fresh fruits (berries, banana slices, diced peaches)

For the Topping:

½ cup cream cheese

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Additional mixed fresh fruit for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with liners or spray it with non-stick cooking spray.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, rolled oats, sugar, baking powder, baking soda, salt, and cinnamon. Whisk together until well mixed.

      Combine Wet Ingredients: In another bowl, mix together the Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over-mix. Gently fold in the mixed fresh fruits until evenly distributed.

          Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden on top.

              Prepare Topping: While the muffins are baking, in a small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

                Cool Muffins: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack.

                  Top with Cream Cheese Mixture: After the muffins have cooled, spread a generous dollop of the cream cheese mixture on top of each muffin.
