Garlic Butter Chicken Pasta Jars

2 cups rotini pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs, diced

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1/2 cup unsalted butter

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken thighs. Season with salt, black pepper, and dried Italian herbs. Cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.

      Prepare the Garlic Butter: In the same skillet, reduce heat to low and add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant but not browned. Add the unsalted butter and allow it to melt, stirring well to combine with the garlic.

        Combine Ingredients: Add the cooked chicken back into the skillet along with the halved cherry tomatoes and spinach. Stir until the spinach wilts and the tomatoes are tender, about 2-3 minutes.

          Mix Pasta: Add the cooked rotini pasta to the skillet and toss everything together to ensure every piece of pasta is coated in the garlic butter sauce. Stir in the grated Parmesan cheese until well combined.

            Assemble the Jars: Layer the pasta mixture into mason jars. Start with the garlic butter chicken pasta at the bottom, followed by an extra sprinkle of Parmesan and a few cherry tomato halves on top for garnish.

              Serve: These jars can be stored in the refrigerator for up to 4 days. To reheat, simply microwave the jar (remove the lid) for 1-2 minutes or until heated through. Garnish with fresh parsley before serving.
