1 pound large shrimp (peeled and deveined)

1/4 cup unsalted butter

4 cloves garlic (minced)

Juice and zest of 1 lemon

1 tablespoon fresh parsley (chopped)

1 teaspoon paprika

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and black pepper (to taste)

8-10 skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Prepare the Marinade:

    In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat and stir in the lemon juice, lemon zest, paprika, red pepper flakes (if using), salt, and black pepper.

      Marinate the Shrimp:

        In a large bowl, add the cleaned shrimp. Pour the garlic butter marinade over the shrimp, tossing to thoroughly coat them. Allow the shrimp to marinate for at least 20 minutes at room temperature. For deeper flavor, cover and refrigerate for up to 1 hour.

          Preheat the Grill:

            Preheat your grill to medium-high heat. If using a grill pan, lightly grease it and preheat on medium-high.

              Assemble the Skewers:

                Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp to ensure even cooking. Optionally, you can alternate with slices of lemon or vegetables like bell pepper or zucchini for added color and flavor.

                  Grill the Skewers:

                    Place the skewers on the grill or grill pan. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Be careful not to overcook them, as shrimp can become tough.
