Ingredients

1 (4-5 lb) bone-in turkey breast, thawed

1/4 cup olive oil

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon lemon zest

1 tablespoon Dijon mustard

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon paprika

1 cup chicken broth

Optional: Fresh herbs for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Herb Mixture: In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, parsley, lemon zest, Dijon mustard, salt, black pepper, and paprika. Mix well to form a paste.

Prep the Turkey: Pat the turkey breast dry with paper towels. Carefully loosen the skin from the meat, creating pockets where you can spread the herb mixture.

Season the Turkey: Gently rub half of the herb mixture under the skin and the other half all over the outside of the turkey breast. Make sure to coat it evenly for maximum flavor.

Roast the Turkey: Place the turkey breast, skin-side up, on a roasting rack in a baking pan. Pour the chicken broth around the turkey (not over) to keep it moist during roasting.

Bake: Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey with the pan juices every 30 minutes to enhance flavor and moisture.

Rest the Turkey: Once cooked, remove the turkey from the oven and let it rest for 15-20 minutes before carving. This allows the juices to redistribute.

Serve: Slice the turkey breast and serve warm, garnished with fresh herbs if desired. Pair with your favorite sides for a complete meal.
