Ingredients

1 lb (450g) fresh asparagus, trimmed

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon sea salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for a kick)

2 tablespoons grated Parmesan cheese (optional for a rich flavor)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Asparagus: Rinse the asparagus under cold water and trim the tough end of each stalk.

Make the Garlic Lemon Mixture: In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, sea salt, black pepper, and red pepper flakes (if using).

Coat the Asparagus: Place the asparagus in a large mixing bowl. Pour the garlic lemon mixture over the asparagus and toss until all the spears are evenly coated.

Spread on Baking Sheet: Line a baking sheet with parchment paper or lightly grease it. Spread the coated asparagus in a single layer on the baking sheet.

Roast the Asparagus: Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly crispy, dependent on your preferred doneness.

Add Cheese: If using, sprinkle the grated Parmesan over the asparagus in the last 2 minutes of roasting for a melty finish without burning.

Serve: Remove from the oven and serve hot. Enjoy as a side dish or tossed into a salad!
