Ingredients

1 lb (450g) fresh baby bella or cremini mushrooms, cleaned and stems trimmed

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped (for garnish)

1 tablespoon lemon juice (optional for brightness)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Mushrooms: In a large bowl, combine the cleaned mushrooms, olive oil, minced garlic, dried thyme, dried oregano, salt, and black pepper. Toss gently to coat the mushrooms evenly with the oil and seasonings.

Roast the Mushrooms: Spread the coated mushrooms in a single layer on the prepared baking sheet. Roast in the preheated oven for 15 minutes.

Add Parmesan: Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the mushrooms. Return to the oven and roast for an additional 10-15 minutes, or until the mushrooms are golden brown and tender, and the cheese is melted and bubbly.

Garnish: Once done, take the roasted mushrooms out of the oven and drizzle with lemon juice for a touch of brightness (optional). Sprinkle chopped fresh parsley over the top before serving.

Serve: Enjoy these delicious Garlic Parmesan Roasted Mushrooms warm as a side dish, appetizer, or topping for pizzas and salads!
