4 medium zucchinis (about 1.5 lbs)

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup freshly grated Parmesan cheese

1/4 cup chopped fresh parsley

Juice of 1/2 lemon

Zest of 1 lemon

Prepare the Zoodles: Using a spiralizer, create noodles from the zucchinis. If you don't have a spiralizer, you can use a julienne peeler or a box grater to create thin strips. Place the zoodles in a colander, sprinkle with a little salt, and let them sit for about 10-15 minutes to draw out excess moisture.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes, until the garlic is golden and fragrant, being careful not to burn it.

      Cook the Zoodles: Rinse the zoodles under cold water to remove excess salt, then gently pat them dry with a paper towel. Add the zoodles to the skillet with the sautéed garlic. Cook for 3-5 minutes, stirring frequently, until the zoodles are tender but still slightly crisp.

        Add Cheese and Seasoning: Reduce the heat to low. Add the grated Parmesan cheese, fresh parsley, lemon juice, and lemon zest to the pan. Stir well to combine, allowing the cheese to melt and coat the zoodles. Season with salt and pepper to taste.
