2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

½ cup all-purpose flour

Fresh parsley (for garnish)

    Prepare the Zucchini: Wash the zucchinis and cut them into fry-shaped sticks, approximately 1/4 inch thick. Ensure the pieces are uniform for even cooking.

      Set Up the Breading Station: In one shallow dish, add the flour. In a second dish, beat the eggs until well mixed. In a third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper.

        Bread the Zucchini Fries: Dip each zucchini stick into the flour, shaking off any excess. Then, coat it in the beaten egg, letting any extra drip off. Finally, roll the zucchini in the breadcrumb mixture, pressing lightly to ensure good coverage. Repeat this for all zucchini sticks.
