1 pound large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1 cup cornmeal

2 teaspoons Cajun seasoning

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Vegetable oil, for frying

4 sub rolls or French baguettes

1 cup shredded lettuce

1 large tomato, sliced

½ cup mayonnaise

Hot sauce, to taste

Optional: sliced pickles for garnish

Instructions
 

Marinate the Shrimp: In a large bowl, combine the shrimp and buttermilk, ensuring they are fully submerged. Let them marinate for about 30 minutes in the refrigerator to tenderize and flavor the shrimp.

    Prepare the Coating: In a separate bowl, whisk together the flour, cornmeal, Cajun seasoning, garlic powder, paprika, salt, and black pepper.

      Heat the Oil: In a deep frying pan or large cast-iron skillet, add about 2 inches of vegetable oil. Heat over medium-high heat until it reaches 350°F (175°C).

        Coat the Shrimp: Remove the marinated shrimp from the refrigerator. Shake off the excess buttermilk, then dredge each shrimp in the flour mixture, pressing lightly to ensure an even coating. Shake off any excess flour.

          Fry the Shrimp: Once the oil is hot, carefully add the coated shrimp in batches, avoiding overcrowding the pan. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the shrimp and place them on a paper towel-lined plate to drain any excess oil.

            Prepare the Rolls: While the shrimp are frying, slice the sub rolls or French baguettes in half and lightly toast them if desired.

              Assemble the Po’ Boys: Spread a generous amount of mayonnaise on the inside of each roll. Layer with shredded lettuce, followed by the sliced tomatoes, and top with the golden fried shrimp.
