Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon lemon zest

Salt and pepper, to taste

1 tablespoon fresh cilantro, chopped (for garnish)

For the Tacos:

8 small corn tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

1 lime, cut into wedges

½ cup sour cream or Greek yogurt

2 tablespoons fresh lime juice

1 tablespoon hot sauce (optional)

Instructions

Marinate the Shrimp: In a bowl, combine the peeled shrimp with smoked paprika, chili powder, lemon zest, salt, and pepper. Toss well and let it sit for about 15 minutes to absorb the flavors.

Prepare the Garlic Butter: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.

Cook the Shrimp: Increase the heat to medium-high. Add the marinated shrimp to the skillet. Cook for 2-3 minutes per side, or until they turn pink and opaque. Remove from heat.

Warm the Tortillas: In a separate pan, warm the corn tortillas over medium heat for about 30 seconds per side, or until pliable. You can also wrap them in aluminum foil and place them in a preheated oven (about 350°F) for 10 minutes.

Assemble the Tacos: On each tortilla, layer a portion of the garlic butter shrimp, a handful of shredded red cabbage, and a few slices of avocado. Drizzle with a mixture of sour cream and fresh lime juice. Top with fresh cilantro and additional hot sauce if desired.

Serve: Squeeze a wedge of lime over the assembled tacos and serve immediately. Enjoy with extra lime and hot sauce on the side!
