1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

8 ounces elbow macaroni or any pasta of choice

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

¼ teaspoon cayenne pepper (optional, for a kick)

Fresh parsley, chopped, for garnish

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Roast the Cauliflower: On a baking sheet, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out in a single layer and roast in the oven for about 25-30 minutes or until golden and tender, flipping halfway through.

      Cook the Pasta: While the cauliflower is roasting, cook your pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.

        Make the Cheese Sauce: In a large saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes until it’s a light golden color. Gradually whisk in the whole milk, making sure no lumps form. Continue to stir until the mixture thickens, approximately 5-7 minutes.
