Green Chili Pasta Shells

12 large pasta shells

1 cup green chili sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro, for garnish

Olive oil, for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, chopped spinach, garlic powder, onion powder, cumin, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Stuff the Shells: Using a spoon, carefully fill each pasta shell with the cheese mixture. Be generous!

          Assemble the Dish: In a baking dish, spread 1/2 cup of green chili sauce evenly on the bottom. Arrange the stuffed pasta shells in a single layer on top of the sauce. Pour the remaining green chili sauce over the shells, ensuring they are well covered.

            Add Cheese Topping: Sprinkle the remaining mozzarella cheese over the top of the shells.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once done, remove from the oven and let it cool slightly. Drizzle a little olive oil on top and garnish with fresh cilantro. Serve warm and enjoy your spicy delight!
