Grilled Peach and Burrata Salad

Ingredients
  

2 ripe peaches, halved and pitted

200g burrata cheese

4 cups arugula or mixed salad greens

1/4 cup balsamic glaze

1/4 cup toasted walnuts, chopped

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat. If you are using a grill pan, place it on medium heat on the stovetop.

    Grill the Peaches: Brush the cut sides of the peach halves with a little olive oil. Place the peaches cut side down on the grill. Grill for about 3-4 minutes, until they have nice grill marks and are slightly softened. Flip them over and grill for an additional 1-2 minutes. Remove from the grill and let cool slightly.

      Assemble the Salad Base: In a large bowl, toss the arugula (or mixed greens) with the remaining olive oil, salt, and black pepper to taste. Arrange the dressed greens on a serving platter.

        Add Burrata: Tear the burrata into large pieces and place them evenly over the greens.

          Add Grilled Peaches: Once the grilled peaches are slightly cooled, place them around the burrata on the salad.

            Top with Walnuts: Sprinkle the toasted walnuts atop the salad for added crunch.

              Drizzle and Garnish: Generously drizzle the balsamic glaze over the entire salad. Garnish with fresh basil leaves for a pop of color and flavor.

                Serve: Enjoy immediately while the peaches are warm and the burrata is creamy!
