2 cups fresh cherries, pitted and halved

1 cup cherry juice (or your favorite juice for variation)

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Pinch of sea salt

Optional: Fresh mint leaves for garnish

Prepare the Cherries: In a mixing bowl, combine the pitted and halved cherries with honey, lemon juice, and a pinch of sea salt. Gently toss them to coat all the cherry pieces. Let it marinate for about 10 minutes.

      Fill the Molds: Pour the cherry mixture into popsicle molds, filling them about 3/4 full to allow for expansion. Insert the sticks and freeze for at least 4 hours or until completely solid.
