Grilled Tilapia Tacos with Cabbage Slaw

4 tilapia fillets

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 medium carrot, julienned

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon apple cider vinegar

1 tablespoon honey or agave syrup

Optional: sliced avocados and fresh lime wedges for serving

Instructions
 

Prep the Marinade: In a small bowl, whisk together olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.

    Marinate the Tilapia: Place the tilapia fillets in a shallow dish and pour the marinade over them. Coat evenly and let marinate for 15-30 minutes.

      Prepare the Slaw: In a large mixing bowl, combine the green cabbage, red cabbage, carrot, and cilantro. In a separate small bowl, whisk together lime juice, apple cider vinegar, and honey. Pour the dressing over the slaw mixture and toss to combine. Set aside to let the flavors meld.

        Grill the Tilapia: Preheat your grill or grill pan over medium-high heat. Once hot, place the marinated tilapia fillets on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork. Remove from heat and let rest for a couple of minutes.

          Warm the Tortillas: While the fish is resting, warm the tortillas on the grill for 30 seconds on each side until soft and pliable.

            Assemble the Tacos: Break the grilled tilapia into large pieces and place on each tortilla. Top with a generous amount of cabbage slaw and, if desired, sliced avocados.

              Serve: Squeeze fresh lime juice over the assembled tacos and serve immediately with extra lime wedges on the side.
