Grilled Veggie Quesadillas

2 large flour tortillas

1 cup bell peppers (mixed colors), sliced

1 medium zucchini, sliced

1 small red onion, thinly sliced

1 cup corn kernels (fresh or frozen, thawed)

1 cup black beans, rinsed and drained

1 cup shredded mozzarella cheese (or your favorite cheese)

1 teaspoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro leaves (for garnish)

Optional: Avocado slices and salsa (for serving)

Instructions
 

Prep the Veggies: In a bowl, combine the sliced bell peppers, zucchini, and red onion. Drizzle with olive oil, then sprinkle with chili powder, cumin, salt, and pepper. Toss until the vegetables are well coated.

    Grill the Veggies: Preheat your grill or grill pan over medium-high heat. Add the seasoned vegetables, grilling for about 5-7 minutes or until they are tender and lightly charred. Remove from the heat and stir in the corn and black beans.

      Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Evenly distribute half of the grilled veggie mixture on one half of the tortilla, then sprinkle half of the shredded cheese over the veggies. Fold the tortilla over to enclose the filling. Repeat with the second tortilla.

        Grill the Quesadillas: Lightly grease the grill or grill pan. Place the quesadillas on the grill and cook for about 4-5 minutes on each side, or until the tortillas are golden brown and crispy and the cheese has melted. Press down gently with a spatula for even grilling.
