Hatch Chili Tater Tot Casserole

1 pound ground beef (or ground turkey)

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1 can (15 oz) black beans, rinsed and drained

1 can (4 oz) diced green chilies (Hatch chilies if available)

2 cups frozen tater tots

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the beef: In a large skillet over medium heat, add the ground beef. Season with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook until browned, breaking it apart as it cooks—about 5-7 minutes. Drain excess fat if needed.

      Mix the filling: In a large bowl, combine the cooked beef, cream of mushroom soup, sour cream, black beans, diced green chilies, and half of the shredded cheddar cheese. Stir until well combined.

        Layer the casserole: Pour the mixture into a greased 9x13 inch (or similar sized) baking dish, spreading it evenly.

          Add tater tots: Arrange the frozen tater tots in a single layer on top of the beef mixture, making sure they are evenly spread out.

            Add cheese: Sprinkle the remaining shredded cheddar cheese over the top of the tater tots.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the tater tots are golden brown and crispy.

                Garnish and serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh cilantro if desired. Serve hot and enjoy!
