Hatch Chili Turkey Rice Burritos

1 pound ground turkey

1 cup cooked rice (white or brown)

1 cup Hatch green chiles, diced (fresh or canned)

1 small onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 cup shredded cheddar cheese

1/2 cup sour cream

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes, or until the onion becomes translucent.

      Season the Mixture: Sprinkle the ground cumin, smoked paprika, chili powder, salt, and pepper over the turkey mixture. Stir well to combine and cook for another 2 minutes to toast the spices.

        Incorporate Vegetables: Stir in the diced Hatch green chiles, black beans, and corn. Cook for an additional 3-5 minutes until everything is heated through and well combined.

          Mix in Rice and Cheese: Add the cooked rice and half of the shredded cheddar cheese to the skillet. Mix everything together until the cheese has melted and all ingredients are evenly distributed.

            Assemble the Burritos: Lay out the flour tortillas on a clean surface. Spread a couple of spoonfuls of the turkey mixture in the center of each tortilla. Top with a dollop of sour cream and sprinkle the remaining cheddar cheese on top.

              Roll the Burritos: Fold in the sides of the tortilla and then roll it up from the bottom, making sure to keep the filling tucked inside. Repeat with the remaining tortillas.

                Heat the Burritos (Optional): For a crispy finish, place the assembled burritos in a skillet with a little oil over medium heat, seam side down. Cook for 2-3 minutes per side until golden brown.

                  Serve: Cut the burritos in half for serving and garnish with fresh cilantro. Serve with lime wedges on the side for added flavor.
