Ingredients

2 medium zucchinis, spiralized

1 red bell pepper, sliced into strips

1 cup snap peas, trimmed

1 cup carrots, julienned

1 cup broccoli florets

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce (low-sodium)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon honey (or maple syrup for a vegan option)

1 tablespoon sesame seeds

3 green onions, sliced

Salt and pepper to taste

Optional: Cooked protein of choice (chicken, tofu, or shrimp)

Instructions

Preparation of Vegetables: Start by washing and spiralizing the zucchinis into noodles using a spiralizer or a vegetable peeler. Set aside. Prepare all the other vegetables by slicing them into the desired shapes.

Heat the Oils: In a large skillet or wok, heat the olive oil and sesame oil over medium-high heat until shimmering.

Sauté Aromatics: Add the minced garlic and ginger to the skillet; sauté for about 30 seconds until fragrant, being careful not to burn them.

Add Vegetables: Toss in the broccoli florets, snap peas, bell pepper, and carrots. Stir-fry the vegetables for about 3-5 minutes, or until they are tender-crisp.

Combine with Zucchini Noodles: Gently add the spiralized zucchini noodles to the skillet. Stir well to combine with the other vegetables. Cook for another 2-3 minutes until the zucchini noodles are heated through but still firm.

Seasoning: In a small bowl, mix together the soy sauce, honey (or maple syrup), and a pinch of salt and pepper. Pour this sauce over the stir-fry and toss to coat all the ingredients evenly.

Finishing Touches: Remove from heat, sprinkle sesame seeds and sliced green onions over the stir-fry, and give it one last gentle toss.

Serving Suggestions: Serve the stir-fry warm, either on its own or topped with your choice of protein. Enjoy!
