8 oz elbow macaroni

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 cup frozen peas (thawed)

4 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 2 minutes until bubbly and slightly golden (this is your roux).

      Add Milk and Seasonings: Slowly pour in the whole milk, whisking constantly to avoid lumps. Continue to cook on medium heat until the sauce thickens, about 5-7 minutes. Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.

        Incorporate Cheese: Remove the saucepan from heat and add in both the cheddar and mozzarella cheeses, stirring until they melt and create a smooth sauce. Gently fold in the thawed peas.

          Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Stir until all pasta is evenly coated.

            Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased 9x13 inch baking dish.

              Prepare the Topping: In a small bowl, mix the breadcrumbs with grated Parmesan cheese and olive oil. Spread the breadcrumb mixture evenly over the mac and cheese.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.

                  Garnish and Serve: Once baked, remove from the oven and let it sit for about 5 minutes. Garnish with chopped fresh parsley before serving.
