3 medium carrots, sliced

2 celery stalks, diced

1 teaspoon dried rosemary

4 cups chicken broth

2 cups cooked chicken, shredded

1 cup frozen peas

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup buttermilk

4 tablespoons unsalted butter, melted

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables begin to soften.

    Add Herbs and Broth: Stir in the dried thyme, rosemary, salt, and black pepper, and cook for another minute. Pour in the chicken broth, and bring the mixture to a gentle boil.

      Chicken Inclusion: Once boiling, add the shredded cooked chicken and frozen peas to the pot. Reduce the heat to low and let it simmer while you prepare the dumplings.
