1/2 pound ground pork (adds moisture)

1 cup breadcrumbs (plain or Italian seasoned)

1/2 cup milk

1/2 cup onion, finely chopped

1/2 cup green bell pepper, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

2 teaspoons Worcestershire sauce

1 tablespoon mustard (yellow or Dijon)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika (for a hint of smokiness)

For the Tomato Glaze:

1/2 cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet over medium heat, sauté the chopped onion and green bell pepper with a little oil until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool slightly.

      Mix Ingredients: In a large bowl, combine the ground beef and ground pork. Add the sautéed vegetables, breadcrumbs, milk, chopped parsley, egg, Worcestershire sauce, mustard, salt, pepper, and smoked paprika. Mix gently until combined. Tip: Don’t overmix, as this can make the meatloaf tough.

        Shape the Meatloaf: Transfer the mixture to a lined or lightly greased loaf pan. Press it into the pan to form a uniform shape, smoothing the top with a spatula.
